"Must do"s in Oz

"Must do"s in Oz
I'm off to Oz this chrimbo with hubby (Agent Smith) to go to one of his chum's weddings. We land in Sydney on Boxing Day morning, have to go to the wedding Adelaide on 7th January and leave from Sydney on the 12th.
What do we *have* to do whilst we're there?
I'd like to see the penguins and go wine tasting. Agent Smith wants to see the start of the Sydney-Hobart race. We want to go diving (but don't think we have time to visit the reef this visit) and we prefer to be active - so any suggestions for adventures, places to see, things to do would be gratefully received.

went to the blue mountains they are great. also sydney is a really fun city as well. if you have chance, go to newcastle and do a wine tour there (loads of wine tasting!!) we used shadows wine tours.
in byron bay atm, its alternative and fun, the beach is great but it depends what you like to do really!

Interesting; as we're off in Jan I asked an Aussie friend about Newcastle and he almost prohibited the concept on the grounds that, like Woomera, it is simply an industrial estate.
